Instructions
Prepare the Eggplant
Trim the stems. Make several long, deep slits lengthwise into each eggplant (don't cut all the way through). This helps them absorb flavor. Alternatively, cut into large chunks for a traditional texture.
Sauté Aromatics
Heat oil in a large pot over medium heat. Cook onions until translucent (5-7 mins). Add garlic and ginger; sauté for 1 minute until fragrant.
Build the Flavor
Stir in gochujang, soy sauce, and syrup. Add ground spices (cumin, coriander, turmeric) and toast for 30 seconds. Pour in coconut milk, tomatoes, and broth. Bring to a simmer.
Slow Simmer
Submerge eggplants in the liquid. Cover and cook for 20-30 minutes until tender.
Pro Tips
Add Protein
Stir in cubes of firm tofu or a can of chickpeas during the last 10 minutes of simmering.
Balance the Heat
If it's too spicy, add an extra splash of coconut milk or a squeeze of fresh lime juice to brighten the flavor.
